Bacon Arugula Salad & Strawberry Vinaigrette

This sweet and savory salad marries an interesting flavor and texture combo that somehow works so well it makes you forget you're eating healthy.

Ingredients
  

Strawberry Vinaigrette

  • 1/2 cup olive oil
  • 1 cup strawberries, sliced
  • 2 tbs balsamic vinegar 2 tbs = original
  • Salt and pepper, to taste

Main Salad Fixings

  • 5 to 6 oz arugula
  • 1 cup strawberries, sliced
  • 4 to 5 slices bacon, cooked and crumbled

Optional but tasty additions

  • 2 oz crumbled feta
  • 1/4 red onion, sliced
  • 1/2 cup chopped pecans

Instructions
 

  • To prepare the vinaigrette, combine all the ingredients in a food processor or blender and pulse until smooth.
  • Toss together arugula, strawberries, and bacon to evenly distribute, then pour on the vinaigrette. Toss again to evenly coat.
  • Serve it up, adding additional toppings as desired.
