Strawberry Kale Salad with Creamy Poppy Seed Dressing

You won't be able to stop eating this Strawberry Kale Salad! It's topped with almonds and a creamy poppy seed dressing.

For The Salad

  • 5 cups chopped kale leaves stems removed
  • 1 cup sliced strawberries
  • 1/2 cup Sliced almonds toasted
  • 1/4 cup feta crumbled

For The Poppy Seed Dressing

  • 3 Tbsp sugar
  • 1/4 cup white wine vinegar
  • 1 tsp grated onion
  • 1 Tbsp poppy seeds
  • 1/2 tsp salt
  • 1/2 cup olive oil


For The Salad

  • Place the kale in a large colander and massage kale under warm running water until tender. Drain and pat dry.
  • In a large salad bowl combine the kale, sliced strawberries, sliced almonds, and feta. Toss gently.

For The Poppy Seed Dressing

  • In a blender add sugar, vinegar, onion, seeds, and salt. Blend for 20 seconds. Slowly stream in oil. Add poppy seeds and stir. Pour over salad and toss.


Toast almonds by placing raw almonds in a skillet on medium heat. Stirring occasionally, toast until light golden brown around the edges and fragrant.
This dressing is also fantastic with spinach and arugula.
