Spinach Mason Jar Salad
This spinach mason jar salad is filled with everything you love! Learn how to pack this salad to make sure your spinach never gets soggy!
- 1/2 cup red onion
- 3/4 cup peas
- 1 cup grated carrots
- 2 hard boiled eggs
- 2 cups spinach
- 3 Tbsp extra virgin olive oil
- 1 Tbsp lemon juice
- pinch salt
- pinch pepper
- Prepare salad dressing by whisking together olive oil, lemon juice, salt, and pepper. Set aside.
- In two mason jars layer in this order: dressing, red onion, peas, carrots, egg, and finishing with the spinach. Top with cover and place in the refrigerator until ready to eat.
To prevent soggy greens, pack the dressing in the bottom and the greens on the top. Mason jar salads are so fun! Use this layering technique to make your own.
