Slow Cooker Red Beans and Rice

This super easy (and vegetarian) meal is put together in the slow cooker, making this Slow Cooker Red Beans and Rice a snap!

Ingredients
  

  • 1 lb dry red beans
  • 3 celery ribs, chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 Tbsp Creole seasoning
  • 4 cups hot cooked rice
  • chopped green onions

Instructions
 

  • In a slow cooker add the beans, celery, bell peppers, onion, garlic, and creole seasoning. Cook on HIGH until beans are tender, about 7 hours.
  • Spoon mixture over hot rice and garnish with chopped green onion.

Notes

Add 1/2 pound smoked turkey sausage if you want to add meat to the dish.
