We are in love with these Slow Cooker Chipotle Lime Pork Ribs! Made in the slow cooker, the pork just falls off the bone.
- 1 4-lb rack pork ribs
- salt and pepper
- 1 Tbsp canola oil
- 1/4 cup brown sugar
- 1 Tbs cumin
- 1 Tbsp dried oregano
- 2 Tbsp chopped chipotle chilies in adobo
- 1/2 cup BBQ sauce
- 2 Tbsp honey
- 1/4 cup lime juice
- lime for serving
- Season your pork ribs with salt and pepper and brush with the canola oil. In a small bowl combine the brown sugar, cumin, and dried oregano. Rub on ribs and place the ribs in a slow cooker. Cover and cook on low for 7 hours 30 minutes.
- Preheat your broiler and line a baking sheet with a sheet of foil. In a bowl mix together the chipotle, BBQ sauce, honey and lime juice.
- Remove the ribs from the slow cooker and brush with the sauce mixture. Put on the baking sheet with foil and broil until the sauce is bubbling and browned, about 4 minutes. Serve with extra lime.
Add more chipotle in adobo if you love spice! Make sure you put this in the slow cooker in the morning if you plan on eating it for dinner.
