Mint Simple Syrup
  1. Rub the mint leaves in your hands to release the fresh flavor.
  2. In a small saucepan over medium heat, combine the water, sugar, and mint leaves. Bring to a boil and reduce heat to a simmer for 5-7 minutes until the mixture coats the back of a spoon dipped in.
West Texas Hangover Cure
  1. Fill your glass about halfway with ice. Juice the lime directly into the glass. Pour in your sotol, Topo Chico Twist of Lime, and mint simple syrup. Stir, and enjoy!
Recipe Notes

Sotol is spirit popular in West Texas and northern Mexico, tasting somewhere between tequila and mezcal, distilled from the flowering sotol plant, also known as the desert spoon. Though the plant's not technically related to agave, due to its long history and cultural importance, the liquor's considered tequila's brother, or at least cousin.
