Vegetarian Hummus Wraps

This healthy and filling vegetarian hummus wrap makes a great lunch or snack. Customize it with your favorite vegetables!

Ingredients
  

For The Hummus

  • 2 garlic cloves
  • 1 14.5 oz can chickpeas
  • 1/2 tsp cumin
  • 3 Tbsp lemon juice
  • 2 Tbsp plain Greek yogurt
  • 2 Tbsp extra virgin olive oil
  • 3 Tbsp tahini
  • Salt, to taste

For The Wrap

  • 1 red bell pepper cut into thin strips
  • 1 cucumber cut in julienne
  • 2 carrots peeled and cut into strips
  • 2 celery sticks cut into strips
  • 6 flour tortillas

Instructions
 

For The Hummus

  • In food processor add all hummus ingredients and puree until smooth. Season with salt. Set aside.

For The Wrap

  • Wrap the tortillas in a damp paper towel and microwave until warm and pliable, about 30 seconds. Add a portion of hummus, red bell pepper, cucumber, carrots, and celery to each wrap. Fold the bottom edge of the tortilla over the filling, then fold in the sides, squeezing the tortilla so the roll stays together. Repeat with remaining tortillas and filling.

Notes

We like the taste of homemade hummus but you can substitute pre-made hummus if you wish.
You can substitute your favorite vegetables in this wrap if you would like.
