In a large nonstick skillet over medium heat, heat the oil. Add the chopped peppers, onions, and garlic and cook until the onion is translucent. Add in the ground turkey and season with Umami seasoning and pepper. Cook until crispy, about 8-10 minutes.
Meanwhile, in a large pot, boil water with a little bit of salt. Cook noodles according to box directions. Drain.
Once the turkey is crispy, drain off fat if necessary, then add in the tomato sauce. Season to taste with salt and pepper. Simmer for 10 minutes, until vegetables are tender.
Stir in the spaghetti noodles and top with parsley and parmesan cheese.
