"A good thing never dies," Garth quotes from one of their favorite movies The Shawshank Redemption. According to Garth, Miss Yearwood (Gosh, isn't that the cutest thing?) prepares five-star meals as you would enjoy at an elegant restaurant but you get to enjoy them wearing a t-shirt and jeans. He goes on to lament on her success, noting how many people watch her show and reach out to her to share how her food has helped bring their family together. "It is then when I realize that what Trisha has done for our house, she has done for millions of households." He ends with an "I'm so proud of you, Honey" (swoon!).

How to Make Trisha Yearwood's Potato Chip Bacon Brownies

Her entire cookbook is filled with comfort food recipes and easy recipes. This recipe was originally shared on the Food Network show, "Trisha's Southern Kitchen", appearing in the Feed a Firefighter episode alongside Marinated Vegetable Salad, Garlicky Braised Beef Shanks, and Smashed Red-Skinned Potatoes with Herb Oil.

This potato chip bacon brownies recipe makes 16 servings and takes about 2 hours, including cooling time.

Preheat your oven to 350 degrees F and line a 9-by-13-inch baking pan with parchment paper to make removing the brownies easier. Spray with nonstick cooking spray.

Meanwhile, cook the bacon slices until crispy, remove to a plate, and make sure to save the bacon grease in the pan. Add the unsalted butter and 2 cups sugar to the pan and make a brown butter-like concoction in the pan. Remove from heat.

In a large bowl combine the unsweetened cocoa powder, vanilla extract, baking powder, salt, and large eggs until smooth. Add in the butter and beat. Stir in the all-purpose flour until combined. Add in the semisweet chocolate chips, half of the bacon, and 1 cup of the potato chips.

Scoop into the baking pan and sprinkle with the remaining bacon and chips, pressing them slightly into the surface of the brownie. Bake about 30 minutes, let cool, and serve!

INGREDIENTS

  • 8 slices bacon
  • 1 cup unsalted butter
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 4 large eggs
  • 1 1/4 cups semisweet chocolate chips
  • 2 1/2 cups lightly crushed ridged potato chips
  • nonstick cooking spray

Instructions

Preheat the oven to 350 F. Line a 9- by 13-inch baking pan with parchment paper, leaving a 3-inch overhang on all sides. Spray the parchment with cooking spray.

In a medium skillet, cook the bacon over medium heat, stirring often, until very crispy, about 10 minutes. Drain on paper towels. Reserve the fat in the skillet.

Add the butter to the skillet with the bacon fat and melt over medium heat. Add the sugar and stir until it starts to dissolve, about 1 minute. Turn off the heat and let the mixture cool for 2 to 3 minutes.

In the bowl of an electric mixer fitted with the paddle attachment, beat together the cocoa powder, vanilla, baking powder, salt and eggs until smooth, about 5 minutes, then beat in the cooled butter mixture.

Add the flour and stir until just incorporated. Remove the bowl from the mixer and fold in the chocolate chips, half the bacon, and 1 cup of the potato chips. Scoop into the prepared baking pan and smooth with an offset spatula. Sprinkle with the remaining bacon and chips, pressing them lightly onto the surface of the batter.

Bake until a toothpick inserted into the center of the brownies comes out with a few crumbs attached, 25 to 30 minutes. Let cool in the pan for 15 minutes, then transfer to a cutting board and cut into squares.
