Tomato Cracker Salad Recipe

If you're a fan of tomato sandwiches,I have a recipe for your next potluck. Creamy, tangy, and with just the right amount of salt, this tomato cracker salad recipe takes ripe, summer tomatoes and combines them with crushed saltine crackers, mayonnaise, black pepper, and kosher salt. That's all it takes to make this irresistible salad that pairs effortlessly with bbq items such as grilled chicken, ribs, and even pulled pork.

While it may not be much to look at, I can assure you this Southern salad is downright addictive, especially if you are using tomatoes from your own garden. While shooting photos of this dish I kept finding myself sneaking bites.

How to Make Tomato Cracker Salad

Something to keep in mind when you make Southern tomato cracker salad is the tomato seeds. They usually water down the salad even more and don't add much to the dish. The easiest way to de-seed a tomato is to cut it in half horizontally to reveal all of the seeds. Using a spoon or your fingers, remove the seeds and pulp and either discard them in your compost or in my case, throw it into the yard for the chickens to feast on.

To make this tomato cracker salad, start by seeding and chopping 4 medium, fresh tomatoes, and place them in a medium bowl. If you have heirloom tomatoes, those will work beautifully. Whatever tomatoes you can find that are in season, go for it! Next, add mayonnaise and gently combine the two ingredients.

Take a sleeve of saltine crackers and crush them into pieces. If you don't have saltine crackers on hand, Club crackers or Ritz crackers will also work here. Try not to break the crackers down too much, you don't want a ton of crumbs, just bite-size pieces. Toss the cracker pieces into the mixing bowl along with the black pepper and salt and give it all a quick toss. Give it a taste and check for seasonings.

You'll want to serve this salad immediately because the tomatoes mixed with the mayonnaise can make the saltine crackers turn soggy rather quickly. This is a great dish to serve at a summer bbq, potluck, or picnic lunch.

Ingredients
  

  • 4 medium tomatoes, chopped
  • 3/4 cup mayonaise
  • 1 sleeve saltine crackers, broken into pieces
  • kosher salt to taste
  • black pepper to taste

Instructions
 

  • Seed and chop 4 medium, fresh tomatoes and place in a medium bowl. Add in mayonnaise and gently combine the two ingredients.
  • Take a sleeve of saltine crackers and crush them into pieces. Toss the cracker pieces into the mixing bowl along with the black pepper and salt and give it all a quick toss. Give it a taste and check for seasonings before immediately serving to guests.
