- 12 sugar cookies
- 3 Tbsp cream cheese, softened
- 1/2 cup shredded coconut
In a food processor, add the sugar cookies and pulse until fine crumbs form. Add the cream cheese and process until mixture is well combined, about 1 minute.
Shape the mixture into balls and roll in the shredded coconut. Chill until solid and serve.
You can also dip these truffles in melted white chocolate and decorate with coarse sugar.
Keep the truffles in an air-tight container in the fridge.
