- 6 eggs
- 2 green onions, chopped
- 2 jalapeños, sliced
- 1/4 cup pepperjack cheese
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- salt and peper to taste
- 1 Tbsp butter
- 4 small corn tortillas
- 1/2 red onion, sliced
- pico de gallo
In a medium bowl whisk together the eggs, green onion, jalapeños, pepper jack cheese, cumin, cayenne, and salt and pepper to taste.
Heat a skillet over medium-heat and add the butter. Cook eggs until done, about 5 minutes. Remove from heat.
Meanwhile heat tortillas in a skillet. Add eggs to tortillas and top with red onions, cilantro, and pico de gallo. Serve.
You can also use flour tortillas in this recipe.
Up the heat by adding hot sauce to your tacos.
