It all starts with 5 simple ingredients. Yes, you read that right! Only 5 ingredients! This crockpot dip is super savory but slightly sweet from the frozen corn. While the recipe provided is just enough to serve to a crowd of about 8 people, we highly recommend doubling it so there's plenty to go around!
To make this Crack Dip, start by whipping out the slow cooker. This one-pot dip recipe is so simple you can make it with your eyes closed. Place the cream cheese, cooked spicy sausage, cheddar cheese, frozen corn and rotel into the slow cooker and mix to combine. Set to low and cook for 1-2 hours. Once the dip is cooked, either set it to warm or turn off the crockpot to prevent the cheeses from curdling. Who doesn't love a simple recipe?
Of course, you can serve this yummy Cowboy Crack Dip as is, however, there are some additional ingredients you can add in. For a kick of heat, slice up some jalapeños and add those into the mix. Some green onions would be a nice addition as well.
For an even creamier dip, mix in about one cup of sour cream to the mix. The sour cream also adds in a bit of tanginess, which is just delicious. You can also try using Greek yogurt for a healthier option. One of my favorite additions has to do with bacon. Who doesn't love bacon? Finish off your dip by garnishing it with cooked bacon bits. 2 8-oz pkgs cream cheese
1 lb spicy sausage, browned and drained
3 cups shredded cheddar cheese
1 cup frozen corn
2 cans rotel
In a slow cooker combine the cream cheese, sausage, shredded cheese, corn, and rotel. Mix to combine. Cook on LOW until warmed, about 1-2 hours. Serve with tortilla chips.
Once the dip is warmed turn the slow cooker to warm or turn it off completely to make sure the cheese doesn't curdle.
You can also use canned and drained corn for this recipe.
