- 1 8-oz package cream cheese
- 1 cup canned pumpkin
- 2 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 2 cups cool whip
- 1/2 cup graham cracker crumbs
In a medium bowl, whip cream cheese with an electric mixer until light and fluffy. Add canned pumpkin, pumpkin pie spice, and vanilla and mix to combine. Fold in cool whip.
Pour the mixture into the popsicles molds and sprinkle with the graham cracker crumbs. Freeze until solid, preferably overnight.
Let these popsicles thaw for a few minutes before removing from the molds.
