Prep Time: 10 minutes | Cook Time: 8 minutes
- 1 cup peanut butter
- 1 cup sugar
- 1 egg
- 1 tsp baking soda
- favorite jelly or jam
Preheat your oven to 350ºF and spray a cookie sheet with cooking spray.
In a large bowl combine peanut butter, sugar, egg, and baking soda. Mix with an electric mixer until smooth. Roll about a tablespoon of dough into a ball. Repeat with remaining dough and bake until just baked, about 6-8 minutes.
Remove from oven and using a small back end of a teaspoon measuring spoon, create an indent into the middle of the cookie. Top with your favorite jam or jelly and let cool completely.
Be sure not to over bake these cookies. Err on the side of under baking to make sure these are soft and chewy.
Use crunchy peanut butter if you prefer a crunchier cookie.
