How To Make Ooey Gooey Butter Cake, A Classic St. Louis Dessert

With a name like ooey gooey butter cake, it has to be good. Traditionally made in St. Louis, Missouri, this cake recipe almost resembles a vanilla brownie due to its shape, size and the fact that it is usually dusted in confectioners' sugar. Considered one of St. Louis' popular, quirky foods by the St. Louis Convention & Visitors Commission, this gooey cake is one cake you have to make at least once in your life.

According to What's Cooking America, Gooey Butter Cake first got its start in the 1930s when a German baker messed up his ingredient proportions for a coffee cake he was creating. When he pulled the baking dish out of the oven, he discovered his cake was golden brown on top but the middle was like a pudding.

Like many recipe origin stories, this one has a few conflicts. Two families have since come forward and shared how their ancestors created the magical cake batter, One, Johnny Hoffman of St. Louis Pastries Bakery and the other, John Koppe, a St. Louis baker. Whoever invented it, we thank them whole-heartedly.

Preparing your own cake recipe requires only a few ingredients: a box of yellow cake mix, 3 large eggs, butter, one 8-oz package cream cheese, vanilla extract, and powdered sugar. Preheat your oven to 350 and prepare your baking dish by buttering or spraying with cooking spray. In a medium bowl, combine the yellow cake mix, one egg, and melted butter and press into the bottom of the prepared baking pan. In a large bowl or the bowl of your electric mixer, mix the cream cheese on medium speed until light and fluffy. Add in the remaining eggs, vanilla and powdered sugar and spread the cream cheese mixture in the pan with a spatula.

Bake the cake until nearly firm (the cake should still shake in the middle when jiggled) and let cool. Dust with powdered sugar and serve.

Ingredients
  

  • 1 18 oz box yellow cake mix
  • 3 eggs, divided
  • 1/2 cup butter, melted
  • 8 oz cream cheese, room temperature
  • 1 tsp vanilla extract
  • 4 cups powdered sugar
  • Powdered sugar, for dusting

Instructions
 

  • Preheat your oven to 350 and prepare your baking dish by buttering or spraying with cooking spray

Bake 30-40 minutes, until nearly firm (the cake should still shake in the middle when jiggled). Remove from oven and cool.
  • Once cooled, dust with powdered sugar and cut into squares.
