Microwave Divinity Candy

INGREDIENTS

  • 2 cups sugar
  • 1/3 cup light corn syrup
  • 1/2 cup water
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts

Instructions

In a microwave-safe bowl mix together the sugar, corn syrup, and water. Cook the mixture until the mixture is 250ºF, about 3 minutes.

Meanwhile, beat the egg whites with an electric mixer until stiff peaks form. Slowly beat the sugar mixture into the egg whites and beat until no longer glossy, about 7 minutes. Stir in vanilla and nuts.

Grease and add parchment paper to a square baking pan. Pour the mixture into the pan and let stand until cooled, about 30 minutes. Cut into squares and serve.

Notes

Make sure the candy is cooled completely before cutting.
