Hush Puppies with Cajun Dipping Sauce

INGREDIENTS

  • For The Hush Puppies
  • 1 cup yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg, beaten
  • 3/4 cup milk
  • 1/2 cup chopped onion
  • Vegetable oil for deep frying
  • For The Cajun Sauce
  • 1 cup sour cream
  • 1 lemon, juiced
  • 2 tsp honey
  • 1 tsp cajun seasoning

Instructions

For The Hush Puppies

In a large bowl combine the cornmeal, flour, baking powder, and salt and stir. Stir in the egg, milk, and chopped onion until combined.

Meanwhile in a dutch oven heat about 2 inches of oil to 350ºF. When the oil is ready drop the batter by spoonfuls into the oil. Fry until golden brown, about 2-3 minutes. Drain on paper towels.

For The Cajun Sauce

In a small bowl combine the sour cream, lemon, honey, and cajun seasoning. Serve with the hush puppies.

Notes

Serve the hush puppies warm for the best texture.

This cajun sauce makes a great accompaniment to shrimp and fish as well.
