As the weather moves into fall, with winter just around the corner, many people are looking for warm comfort foods like spinach artichoke dip and nachos. Another appetizer that you can't go wrong with is hot corn dip, a delicious combo of corn, green chilies and cheese.

There are so many great things about this recipe, but one is the ease and speed with which this cheesy masterpiece is made. The prep time is five minutes, hard to beat on the busy morning of a game day or family potluck. There is also hardly any clean-up, and hot corn dip can be made in a slow cooker or crock pot for extra convenience.

You can use fresh corn, frozen corn or canned corn depending on what you have on hand. While fresh corn is always tasty, using frozen or canned corn eliminates the labor of cutting corn kernels off the cob, along with removing corn silks. If you decide on canned corn, it's important to drain and rinse corn kernels before use. No matter what, the taste of sweet corn will be irresistible in combination with melted cheese and spicy green chilies.

How to Make Hot Corn Dip

For classic hot corn dip, preheat the oven to 350 and grab a large bowl. Combine 1 cup of your Monterey Jack cheese, and all of your Parmesan cheese, mayo, and green chilies. After ensuring that your ingredients are all mixed together, fill a baking dish with the mixture, smoothing the top with a spatula. Use a dash of salt and pepper, then generously sprinkle the remaining 3/4 cup of cheese on the top, and put it in the oven!

Bake it at 350 degrees Fahrenheit for 30-35 minutes total time , or until the cheese is melted and golden brown on top. It's up to you how crispy you want your cheese layer to be; some choose to take it out as soon as the cheese is melted, while others will bake this tasty dip to the point of cheesy, crispy perfection. It is best enjoyed with tortilla chips or bread as a dipper, or you can use veggies like carrots or red bell pepper as a healthy(ish) version.

Another great aspect of this hot corn dip is that you can add your own pizzazz! Add garlic powder for more flavor, or make it extra cheesy with an addition of pepper jack or sharp cheddar cheese. If you want to add some spice, use diced jalapeno peppers or add a dash of cayenne or chili powder. To make it fancy, a garnish of cilantro is always a yummy addition atop your dip!

INGREDIENTS

  • 2 cups corn
  • 1 4-ounce can green chile peppers
  • 1 3/4 cups shredded monterey jack cheese
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 cup mayonnaise
  • chips, bread or crackers

Instructions

First, preheat the oven to 350. In a large bowl, combine 1 cup of Monterey Jack cheese with Parmesan cheese, mayo, and green chilies. Mix everything fully, then pour into a baking dish, smoothing the top flat with a spatula. Add a dash of salt and pepper, then add the remaining 3/4 cup of cheese on the top, and put it in the oven to cook! Cook it for 30-35 minutes until it reaches your desired level of crispiness.

Notes

For extra flavor, add garlic powder. If you want it super cheesy, sprinkle in some pepper jack or sharp cheddar cheese. For spice, diced jalapeno peppers, cayenne pepper or chili powder will add a nice bite. Garnish with a few leaves of chopped cilantro before serving.
