Instructions
For The Biscuits
  1. Preheat your oven to 450ºF.
  2. In a small bowl or liquid measuring cup combine the milk and lemon juice and let sit 6-8 minutes.
  3. In a large bowl combine the flour, baking soda, baking powder and salt. Whisk to combine. Cut in the butter either with your hands or a pastry blender until it looks like coarse meal.
  4. Pour in the milk mixture and mix until just combined. Transfer to a floured surface and pat into a dough 1/2 inch thick. There's no need to use a rolling pin here. Fold the dough about 4 times and press into 1 inch thick. Using a juice glass or biscuit cutter cut the biscuits into rounds and place on a cookie sheet. Press the scraps together and cut, making sure not to knead.
  5. Place in the oven and bake until light golden brown, about 10-12 minutes. Remove from oven and let cool.
For The Sausage Gravy
  1. In a large bowl combine the ground pork, brown sugar, dried sage, salt, pepper, ground cloves and red pepper flakes. Heat the oil in a skillet over medium-high and add in the pork mixture. Cook until no longer pink. Add in the flour and cook until flour begins to stick to the bottom of the pan, about 2-3 minutes. Slowly whisk in the milk, stirring until the mixture boils. Continue whisking until mixture thickens and remove from heat.
  2. Split a biscuit in half and pour the sausage gravy over the biscuit. Serve.
