Prep Time: 5 minutes | Cook Time: 25 minutes
- 1 1/2 cups extra virgin olive oil
- 10 cloves garlic, sliced
- 1 lemon, juiced
- 1 Tbsp salt
- 1 tsp black pepper
- 2 1/2 lbs chicken thighs
In a mason jar or small bowl combine the oil, garlic, lemon juice, salt and pepper.
Add the marinade to a ziplock bag and add the chicken, tossing to coat. Marinade in fridge for one hour.
Preheat your grill to medium heat. Add chicken and grill, skin side first for 6 minutes. Flip and cook an additional 6 minutes. Continue to turn every six minutes until chicken is done (about 25 minutes total). Remove to a plate and let rest 5 minutes before serving.
10 cloves of garlic is about one full bulb.
You can also make this marinade with chicken breasts. Adjust cooking time as necessary.
An agua fresca goes great with this grilled chicken.
