In a large skillet brown your pork sausage with a tablespoon of oil, making it nice and crisp. Remove from the heat and drain off extra fat. Add in the onion, green chilies, and chopped tomatoes and cook until cooked through.
Warm the tortillas in the microwave by wrapping in a damp paper towel.
Meanwhile, in a small bowl, combine milk and eggs and beat to combine. Cook in a small pan over medium heat until cooked. Set aside.
Assemble the burritos by placing a slice of American cheese in the middle followed by the egg and sausage mixture. Roll up and serve alongside salsa and if you are wanting a big breakfast, some hashbrowns.
