Coconut Date Roll

  • 1 lb pitted dates
  • 1 1/3 cup shredded coconut, divided (Sweetened or unsweetened, your preference)


Process dates and about 3/4 cup of the coconut in a food processor to form a paste. If it's too dry, add up to 3 tbs water, a little bit at a time.

Pinch off roughly a rounded tablespoon's worth of the date mixture and roll in the leftover coconut to coat.

These can be enjoyed immediately or refrigerated for up to two weeks.


These are delicious with almonds. Hide one in the center or a roll, or grind some up with the dates and coconut for an extra layer of flavor and a boost of protein.
