- 1 1/2 cups milk
- 1 cup canned pumpkin
- 1 egg
- 2 Tbsp butter, melted
- 2 cups all-purpose flour
- 2 Tbsp brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
In a bowl combine the milk, canned pumpkin, egg, and melted butter. In a separate bowl whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt.
Stir the wet ingredients into the dry and stir until just combined.
Preheat your griddle over medium-high heat and spray with cooking spray. Scoop the pancake mix onto the griddle and cook until browned on both sides. Serve.
Use about 1/4 cup of batter for each pancake.
