These Cinnamon Pumpkin Pancakes are perfect for those cool winter mornings. Top these delicious pancakes with maple syrup and butter.

Ingredients
  

  • 1 1/2 cups milk
  • 1 cup canned pumpkin
  • 1 egg
  • 2 Tbsp butter, melted
  • 2 cups all-purpose flour
  • 2 Tbsp brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt

Instructions
 

  • In a bowl combine the milk, canned pumpkin, egg, and melted butter. In a separate bowl whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt.
  • Stir the wet ingredients into the dry and stir until just combined.
  • Preheat your griddle over medium-high heat and spray with cooking spray. Scoop the pancake mix onto the griddle and cook until browned on both sides. Serve.

Notes

Use about 1/4 cup of batter for each pancake.
