- 1 1/2 cup all-purpose flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup brown sugar
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 eggs
- 1 cup canned pumpkin
- 1/3 cup vegetable oil
Preheat your oven to 350ºF and coat a loaf pan with cooking spray.
In a medium bowl mix together the flour, baking soda, baking powder, salt, brown sugar, cinnamon, and nutmeg. Stir to combine. Add the eggs, canned pumpkin, and vegetable oil and stir.
Pour into the loaf pan and bake until a toothpick inserted comes out clean, about 1 hour. Let cool in pan for 20 minutes before removing from pan and cooling completely.
Add a bit of nuttiness to your bread by folding in 1/2 cup of chopped pecans.
Serve with butter and jam if desired.
