INGREDIENTS
- 1 1/2 cups butternut squash puree
- 2 cups milk
- 1/2 cup butter, melted
- 2 eggs
- 1 tsp vanilla extract
- 1 Tbsp maple syrup
- 2 cups all-purpose flour
- 1 Tbsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- powdered sugar
Instructions
In a bowl mix together the squash, milk, butter, eggs, vanilla, and maple syrup until incorporated.
In a separate bowl whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger. Add the wet ingredients into the dry and stir until just moistened.
Preheat your waffle iron according to manufacture's instructions. Cook the waffles until golden on both sides. Top with powdered sugar and serve.
Notes
If you prefer a sweeter waffle, add 2 Tbsp of maple syrup.
You can also use this batter to make delicious pancakes.
