Blueberry Lemon Mug Cake

  • 2 Tbsp butter melted
  • 1/4 cup flour
  • 2 Tbsp sugar
  • 1 egg yolk
  • 1 Tbsp milk
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/2 tsp lemon zest
  • 1/4 cup blueberries
  • 1 tsp turbinado sugar


In a large mug mix together melted butter, flour, sugar, egg yolk, milk, vanilla, baking powder, lemon zest, and blueberries.

Top with turbinado sugar. Microwave until the cake pulls away from the sides, about 1 minute 30 seconds. Let cool.


Make sure to keep an eye on your cake while it bakes. Over-baked mug cakes get a bit rubbery.

We recommend using a 12 or 14 oz mug to fit the cake.
