Black Forest Cupcakes with Whipped Cream Frosting

This German cake is extra sweet in cupcake form! These Black Forest Cupcakes are topped with a Whipped Cream Frosting. Yum!

Ingredients
  

For The Chocolate Cake

  • 3/4 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter softened
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup plain yogurt
  • 1 tsp vanilla extract

For The Filling

  • 1 cup cherry pie filling

For The Whipped Cream Frosting

  • 1 1/2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • grated chocolate
  • 12 fresh cherries stems on

Instructions
 

For The Cupcakes and Filling

  • Preheat your oven to 350ºF and line a standard 12-cup muffin tin with paper cupcake liners.
  • In a medium bowl add flour, cocoa powder, baking powder and salt. Whisk to combine and set aside.
  • In a medium mixing bowl cream together butter and sugar, with an electric mixer or stand-mixer, until light and fluffy. Add eggs, one at a time, scraping batter down from sides of bowl in between each addition. Add vanilla and mix. With the mixer running on low slowly pour in half dry ingredients. Add yogurt and mix. Pour in the rest of the flour and mix until incorporated.
  • Fill each cupcake tin 2/3 full and bake until a toothpick inserted in the center comes out clean, about 20-25 minutes.
  • Cool in pan for 5 minutes then transfer to a wire rack to cool completely.
  • Once cooled cut a small hole in the middle of the cupcake and remove cake. Add about a tablespoon of cherry filling to each cupcake.

For The Whipped Cream Frosting

  • In a large mixing bowl, using an electrical mixer, whip heavy whipping cream on high speed until soft peaks form. Add powdered sugar and whip until stiff peaks form.
  • Place in a piping bag fitted with a star tip and pipe frosting on cupcakes. Top with grated chocolate and a cherry.

Notes

Store cupcakes in an airtight container in the refrigerator.
The easiest way to make a hole in the middle of the cupcake is to use a paring knife and cut a slanted indentation in the top of the cupcake. remove the small piece of cake and eat it.
