Bacon Arugula Salad & Strawberry Vinaigrette

INGREDIENTS

  • Strawberry Vinaigrette
  • 1/2 cup olive oil
  • 1 cup strawberries, sliced
  • 2 tbs balsamic vinegar 2 tbs = original
  • Salt and pepper, to taste
  • Main Salad Fixings
  • 5 to 6 oz arugula
  • 1 cup strawberries, sliced
  • 4 to 5 slices bacon, cooked and crumbled
  • Optional but tasty additions
  • 2 oz crumbled feta
  • 1/4 red onion, sliced
  • 1/2 cup chopped pecans

Instructions

To prepare the vinaigrette, combine all the ingredients in a food processor or blender and pulse until smooth.

Toss together arugula, strawberries, and bacon to evenly distribute, then pour on the vinaigrette. Toss again to evenly coat.

Serve it up, adding additional toppings as desired.
