Apple and Red Cabbage Coleslaw

This Apple and Red Cabbage Coleslaw is the perfect salad to put on a pulled pork sandwich. Make it ahead of time and keep it in the fridge.

Ingredients
  

  • 1 red cabbage, shredded
  • 2 apples, grated
  • 1/4 cup toasted walnuts, chopped
  • 2 Tbsp chopped dill

For The Dressing

  • 1 Tbsp Dijon mustard
  • 1/3 cup extra olive oil
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp lemon juice
  • 1 Tbsp honey
  • salt and pepper to taste

Instructions
 

  • Place red cabbage, apples, walnuts, and chopped dill in a bowl and toss.

For The Dressing

  • In a small bowl whisk together the mustard, olive oil, apple cider vinegar, lemon juice, honey, and salt and pepper. Toss in the salad and chill before serving.

Notes

Chill this salad for at least 30 minutes for the best flavor.
We like to use a crisp apple like golden delicious for this salad.
