Prepare the cinnamon simple syrup by mixing together the sugar and water in a small saucepan. Bring to a boil to dissolve sugar. Remove from heat.Add cinnamon sticks and let sit until cool, about 20 minutes.
In a 32-oz mason jar add the simple syrup along with the cinnamon sticks. Add in the sliced apples and the vodka. Shake the bottle and place in the fridge for 3 days.
Once the three days have passed, strain the alcohol through a fine mesh strainer and into a clean mason jar. Keep in the fridge for up to 3 weeks.

In a cocktail shaker combine the apple vodka and apple cider. Pour into a glass filled with ice and top with the ginger ale.
