Go all out and prepare the casserole in a vintage Pyrex to give it that little extra oomph of retro-ness.

This recipe calls for pineapple chunks but using pineapple tidbits or crushed pineapple is just as well if you want a creamier casserole. The pineapple chunks are larger and create a bigger bite. Just be sure to get the canned pineapple in the pineapple juice and not a syrup.

How to Make Pineapple Casserole

Preheat your oven to 350F and prepare your baking dish with cooking spray.

In a large bowl combine the sugar, all-purpose flour, and reserved pineapple juice. Add the drained pineapple chunks and toss to combine. Spoon the pineapple mixture into the prepared casserole dish and top with the shredded cheddar cheese. Set aside.

In a medium bowl combine the buttery cracker crumbs with melted butter and stir to coat. Sprinkle the crumbs over the pineapple evenly.

Bake for 30 minutes or until the top is golden brown and pineapple mixture is bubbling.

  • 1 cup sugar
  • 1/3 cup all-purpose flour
  • 2 cups grated sharp cheddar cheese
  • 2 20-oz cans pineapple chunks, drains, 6 Tbsp pineapple juice reserved
  • 1 cup Ritz cracker crumbs
  • 1/2 cup butter, melted
