This Pineapple Moonshine is the Tropics in a Mason Jar

If you have fantasies of tanning on the beach in the Caribbean with an umbrella drink in your hand, this pineapple moonshine is the way to go. While it can't truly transport you, take a sip of this sweet pineapple-coconut drink and you'll almost feel like you're there. For a sweet and refreshing taste of the tropics, this pineapple cake moonshine is your drink.

The Perfect Summery Drink

This drink recipe combines fresh pineapple, vanilla, coconut water, and alcohol to create a tasty, refreshing drink perfect for a hot summer's day. A dangerously delicious mix, this almost tastes too good for the amount of alcohol in it. If you're looking for something in the same vein as a margarita, mojito or a pina colada, this pineapple cake moonshine won't disappoint. Essentially a pineapple upside down cake in drink form, this cocktail recipe will bring the party no matter the occasion. To make it fancy, garnish with slice of pineapple on the rim!

For extra citrus flavor, add a squirt of lime juice, and for more sugary sweetness add in a spoonful of brown sugar. This easy recipe can also be switched up with peach moonshine instead of pineapple moonshine. If you want extra flavor in your summer drink, add in some grenadine, cranberry juice or orange juice. As for the moonshine, you can buy it at a distillery, which is safer than DIY distilling. This yummy pineapple moonshine recipe is ideal to bring to a BBQ or get-together, and it's best enjoyed alongside fruity dishes like watermelon or fruit salad.

How to Make Pineapple Cake Moonshine

Start by making the pineapple simple syrup, combining pineapple juice, vanilla pods, coconut water, and sugar in a saucepan over medium heat.

Stir until the sugar dissolves, and bring to a boil. Reduce heat and simmer for 5 minutes.

Remove the vanilla pods. Set aside and cool syrup.

Break down pineapple and slice into cubes if you're using a whole pineapple. Add cubes to a large bowl and mash with the back of wooden spoon. If you have muddling tools, you can use those to get the job done.

Add moonshine and pineapple simple syrup to the bowl. Stir to combine.

Portion into 8-ounce mason jars. Split pods into equal segments so each jar has a vanilla pod inside.

Store in a cool, dark place. If your pantry is out of direct sunlight, that's the perfect place for this infusion.

To make moonshine into a tropical pineapple cocktail, combine your pineapple moonshine and club soda in a glass. Add a splash of lemon juice and crushed ice, and stir to combine. Add a slice of pineapple on the rim of the glass for extra fanciness. Enjoy your trip to the tropics!
