Old Fashioned Peanut Brittle

This Old Fashioned Peanut Brittle is a fun treat to make at home. Make this in the microwave for a no-hassle sweet treat.

Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • pinch salt
  • 1 1/2 cups dry roasted peanuts
  • 2 Tbsp butter
  • 1 tsp baking soda
  • 1 tsp vanilla extract

Instructions
 

  • In a large microwavable container combine the sugar, corn syrup, and the salt. Microwave on high for 5 minutes and stir. Add peanuts and microwave 2 minutes more. Immediately Stir in butter, baking soda, and vanilla extract.
  • Pour onto a greased cookie sheet and spread thinly. Cool the brittle until firm then break into pieces. Store in an airtight container.

Notes

Be careful when transferring the bowl to and from the microwave. It will be hot!
When adding the baking soda the mixture will bubble up. Make sure to continue stirring the mixture to fully incorporate.
