To begin, shred a head of green cabbage using a mandoline (you can purchase one here). You can also use a sharp knife and slice the cabbage thinly or use a food processor with a slicing attachment. If you are using a mandoline I highly suggest wearing a cut-proof glove. Of all the injuries I've gotten while cooking, a majority of them are from a mandoline because it is so easy to cut your finger on the sharp blade. You can also use coleslaw mix if you want something a little bit more convenient.
Once the cabbage is shredded, add it to a large bowl. Next, chop up an apple either using the mandoline or a knife. Slice a red onion in half, then slice into thin strips. Dress the shredded cabbage with lemon juice, olive oil, apple cider vinegar, and white wine vinegar. Season with kosher salt and black pepper to taste.
Once everything is mixed, refrigerate the yummy cabbage salad for a few hours to let the flavors meld together. Dairy-free, gluten-free, and packed with veggies, this healthy coleslaw recipe will be your family favorite.
