Maple Nut Cupcakes

These cupcakes are a bit nutty! Take a bite out our Maple Nut Cupcakes flavored with walnuts and pure maple syrup, topped with a sweet frosting.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup toasted pecans, chopped

For The Frosting

  • 1/2 cup butter, softened
  • 1 cup powdered sugar
  • 1 Tbsp maple syrup

Instructions
 

  • Preheat your oven to 350ºF. Line a cupcake pan with 12 liners.
  • In a bowl combine the flour, cinnamon, baking powder, and salt.
  • In a bowl with an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs and egg yolks one at a time, beating after each addition. Add the flour into the mix and then the buttermilk. Fold in the pecans.
  • Pour into the cupcake pan. Bake until a toothpick inserted comes out clean, about 23-25 minutes. Remove from oven and cool completely.
  • Make the frosting by beating together the butter and powdered sugar in a bowl until light and fluffy. Add in the maple syrup and vanilla. Frost the cupcakes and serve.

Notes

Top the cupcakes with a sprinkling of finely chopped pecans.
These are best eaten on the same day but can be stored in the fridge in an airtight container.
