Classic Rum Balls

It's not the holiday season without making a few recipes that have been passed down from generation to generation. For my family, it's rum balls. Passed down from my mother and grandmother, this rum balls recipe is a staple at every family gathering whether it be Christmas Eve or New Years Day. Simple to make, these holiday no-bake cookies are great to give away as gifts, bring to the office cookie exchange, or eat while watching Elf for the fifth time this season.

How to Make Rum Balls

These boozy spiced rum balls take about 10 minutes to make, but I suggest making these a day in advance to let the flavors all meld together.

To start, crush about 75 vanilla wafers in a food processor to make crumbs. You can also place the wafer cookies in a large Ziploc bag and roll with a rolling pin or something else heavy like a bottle of wine. Place the vanilla wafer crumbs in a large bowl. Add 1 1/2 cups of pecans to the food processor and process until ground. You can also do this with a chef's knife and chop it finely. Add the nuts to the bowl with the cookie crumbs.

To the bowl add powdered sugar and unsweetened cocoa powder and stir to combine.

In a separate bowl combine the rum, light corn syrup, and water. Add the rum mixture to the confectioners' sugar mixture and stir to combine. Shape into 1-inch balls then roll in additional powdered sugar, chocolate sprinkles, or wafer crumbs. Store in an airtight container and let chill for at least four hours before serving to bring out the rum flavor.

These holiday cookies pack quite the punch, especially since none of the alcohol is baked out. Make sure only adults eat these sinister treats.
