How to Make the Pioneer Woman’s Favorite Healthy Snack

Ree Drummond, the Pioneer Woman, has a ton of accomplishments under her belt. She's an author, Food Network star, blogger, store owner, landowner, mother, comfort food extraordinaire as well as many other things. Needless to say, Ree Drummond is a successful, hard working woman while still maintaining her down-to -earth, sweet attitude. If you're ever in need of a hearty, delicious meal, Ree's your girl!

Her blog is full of tried-and-tested recipes that are sure to please kids, adults and anyone, really. You'll also love the stories on her blog behind each recipe. You really get to know her through her writing. She's quite the funny one! Known for comfort food, she also has many healthy meals to choose from that are equally just as delicious.

One of her favorite healthy snacks is her recipe for Apple Peanut Butter Delights. They are approved by kids (she says this is one of her children's favorite snacks) and a tasty, quick after school bite. You can also whip these up ahead of time, store them in the freezer and bake them off when you need them. Check out the video below to see how they are made so you can make a batch of your own!

For this recipe, you'll need just a few ingredients, which you might have in your kitchen already! She starts off by halving whole wheat English muffins and spreading a generous amount of  peanut butter over the top of each one and placing them on a sheet pan.

Thinly sliced Granny Smith apples are placed on top. It's important to slice the apples as thin as you can because the apples do not cook for a long time in the oven. This is when a sharp knife comes in handy! Finally, a mixture of sugar, cinnamon and nutmeg (the nutmeg is optional) is sprinkled over the top. Ree then puts the pan in a 350 degree oven for a few minutes. The best part about this recipe is saved for last.

To get a beautiful caramelization on top, Ree sets the oven to broil (watch them closely so they do not burn!) and the top of the Apple Peanut Butter Delights start to bubble and turn a deep amber color. What a great snack not just for kids, but for adults, too!

You can also get creative with this recipe and use different nut or seed butters instead of peanut butter. If you or your child has a peanut allergy, try out sunflower seed butter.
