Grilled Pimento Cheese Sandwich

Turn your lunch into a Southern affair with a Grilled Pimento Cheese Sandwich. Grilled with ham and pickles, it'll become your new favorite sandwich.

Ingredients
  

  • 8 slices white bread
  • 1 cup pimento cheese spread
  • 8 slices deli ham
  • 8 sandwich pickles
  • 4 Tbsp mayonaise, divided

Instructions
 

  • Build the sandwiches by spreading 1/4 cup of pimento cheese spread on four pieces of bread. On the other four pieces add two slices of ham each and two sandwich pickles. Close the sandwiches. Spread two tablespoons of mayonnaise on to top of each sandwich.
  • Meanwhile preheat a skillet over medium heat. Add a sandwich, mayonnaise side down to the pan. Spread some mayonnaise on the top side of the bread and cook the sandwich until golden brown on both sides, about 5 minutes. Serve.

Notes

You can also use butter to grill your sandwiches but we love the golden crust that mayonnaise gives.
We used sandwich pickles but you can also use small pickles.
