Green Beans Almondine is a Classic Dinner Side

Green beans are a super versatile veggie and can be paired with just about any main dish. Think about it — green bean casserole, cooked quickly on a stovetop with a little bit of butter as a delicious side dish, you name it. But have you ever tried green beans almondine? It's a fairly easy green bean recipe you can throw together on a weeknight.

How to Make Green Beans Almondine

For this recipe, you'll need one pound of green beans (many recipes recommend French haricot vert green beans), four tablespoons of butter, half a cup of flaked almonds, sliced almonds, or slivered almonds, two teaspoons of lemon juice, one tablespoon of water, one clove of minced garlic, and salt and black pepper to taste.

First, wash and trim your green beans for the almondine recipe and mince the garlic if it's not pre-minced. Melt the butter in a large skillet over medium heat, then add the almonds and saute for 3 to 4 minutes or until you have golden brown toasted almonds (you'll need to stir them periodically).

Take the almonds out of the pan and wipe it clean, preferably with a paper towel. Next, add the green beans and water to the pan and cook, stirring occasionally. Cook until the beans are crisp-tender and you have bright green beans. The bright green color is a good indicator that they're done! This should take about five minutes.

Add in the lemon juice, garlic, salt, and pepper, then sprinkle the almonds over the mix. Toss it all a bit and it should be ready to serve!

With low carbohydrates, high fiber, and fairly low cholesterol, this is an excellent side dish for most dinners. It's a healthy dish and a good source of vitamin A and vitamin C. It's also customizable — you can add in shallots or parmesan, switch out the butter for olive oil, make it dairy-free, and use either fresh green beans or frozen ones you've thawed.   • 1 pound green beans

  • Salt and pepper, to taste
