Garlic Prime Rib

This Garlic Prime Rib is an elegant way to ring in the New Year or any celebration. And look forward to delicious leftovers.

Ingredients
  

  • 1 6-8 lb prime rib roast, at room temperature
  • 1 Tbsp kosher salt
  • 1 tsp fresh cracked black pepper
  • 8 cloves garlic, minced
  • 2 Tbsp fresh oregano, chopped
  • 3 Tbsp butter, softened

Instructions
 

  • Preheat your oven to 450ºF and move your oven rack to the lowest level.
  • Sprinkle the roast with salt and pepper. In a small bowl combine the garlic, oregano and butter to form a paste. Brush on the roast and place the roast fat side up in a roasting pan. Place in the oven and bake 20 minutes.
  • Reduce the oven temperature to 250ºF and bake until the center of the roast reaches 110ºF with a instant-read thermometer, about 1 1/2 hours.
  • Remove the roast from the oven and cover with foil. Let sit 20 minutes. Serve.

Notes

Prime Rib is best served at medium-rare.
This can be enjoyed during a New Year's Brunch.
