Garlic Grilled Chicken Thighs
Sometimes you just need something fresh and simple for dinner. These Garlic Grilled Chicken Thighs fit the bill for a summertime cookout.
- 1 1/2 cups extra virgin olive oil
- 10 cloves garlic, sliced
- 1 lemon, juiced
- 1 Tbsp salt
- 1 tsp black pepper
- 2 1/2 lbs chicken thighs
- In a mason jar or small bowl combine the oil, garlic, lemon juice, salt and pepper.
- Add the marinade to a ziplock bag and add the chicken, tossing to coat. Marinade in fridge for one hour.
- Preheat your grill to medium heat. Add chicken and grill, skin side first for 6 minutes. Flip and cook an additional 6 minutes. Continue to turn every six minutes until chicken is done (about 25 minutes total). Remove to a plate and let rest 5 minutes before serving.
10 cloves of garlic is about one full bulb. You can also make this marinade with chicken breasts. Adjust cooking time as necessary.
