Easy Vanilla Pudding
Go back to your elementary school days with this Easy Vanilla Pudding. It only takes twenty minutes to make and an hour to chill.
- 1/2 cup sugar
- 3 Tbsp cornstarch
- pinch salt
- 2 cups milk
- 2 egg yolks
- 2 Tbsp butter
- 2 tsp vanilla extract
- In a saucepan whisk together the sugar, cornstarch, and salt. Add 1/4 cup of milk and stir, forming a paste. Whisk in the remaining milk slowly and add in the egg yolks.
- Turn the burner to low and stirring constantly, cook the mixture until thickened, about 15 minutes. Do not boil the mixture.
- Remove from heat and stir in the butter and vanilla. Pour into a bowl and cover with plastic wrap, pressing the surface with the wrap. Chill until set, about 1 hour. serve.
To prevent a pudding skin make sure to place the plastic wrap directly on the mixture when chilling. We recommend using whole milk for this recipe.
