Cucumber Pineapple Agua Fresca
Turn your summer afternoon into a fiesta with this simple Cucumber Pineapple Agua Fresca recipe. Serve chilled and with extra pineapple slices.
- 3 cups fresh diced pineapple
- 1 cucumber, chopped
- 1/2 cup sugar
- 10 mint leaves
- 6 cups cold water
- Working in batches, blend the pineapple, cucumber, sugar, mint leaves and water until smooth.
- Strain the mixture through a fine-mesh sieve into a pitcher. Pour into glasses and serve.
You can either cut the pineapple yourself of buy pre-cut fresh pineapple slices. Make sure everything is chilled before serving.
