Cucumber Pineapple Agua Fresca

Turn your summer afternoon into a fiesta with this simple Cucumber Pineapple Agua Fresca recipe. Serve chilled and with extra pineapple slices.

Ingredients
  

  • 3 cups fresh diced pineapple
  • 1 cucumber, chopped
  • 1/2 cup sugar
  • 10 mint leaves
  • 6 cups cold water

Instructions
 

  • Working in batches, blend the pineapple, cucumber, sugar, mint leaves and water until smooth.

  • Strain the mixture through a fine-mesh sieve into a pitcher. Pour into glasses and serve.

Notes

You can either cut the pineapple yourself of buy pre-cut fresh pineapple slices.
Make sure everything is chilled before serving.
