Cowboy Skillet Hash

Ingredients
  

  • 1 Tbsp olive oil
  • 1 onion, diced
  • 2 potatoes, cut into small cubes
  • 1 cup chopped ham
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 eggs
  • 1 Tbsp butter
  • 1 Tbsp chopped green onion

Instructions
 

  • In a large cast-iron skillet over medium-high heat, add the oil and cook the onion until softened, about 6 minutes. Add the potatoes, ham, salt, and pepper, and cook until potatoes have softened, about 25 minutes, stirring frequently.
  • Meanwhile in a small skillet fry the eggs in a bit of butter. Top the hash with the eggs and garnish with the green onions. Serve at once.

Notes

You can also use cooked potatoes from the night before for this recipe.
The potatoes tend to brown easily so make sure to stir them often.
