Cherry Almond Muffins

Start your morning off on a cheery note with these Cherry Almond Muffins made with frozen cherries and a hint of almond extract.

Ingredients
  

  • 2 eggs
  • 1/3 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup frozen cherries

Instructions
 

  • Preheat your oven to 400ºF and line a muffin tin with paper inserts.
  • In a bowl whisk together the eggs, milk, vegetable oil, vanilla extract and almond extract. In a separate bowl whisk together the flour, sugar, baking powder and salt.
  • Pour the wet into the dry and mix until moistened. Fold in the cherries. Spoon batter into cups and bake until a toothpick inserted comes out clean, about 18-20 minutes. Remove from oven and serve.

Notes

You can use chopped fresh cherries for this recipe as well.
This makes a fun Sunday brunch meal.
