Butternut Squash Waffles

Have some leftover steamed butternut squash from the night before? Puree it up and make a batch of Butternut Squash Waffles.

Ingredients
  

  • 1 1/2 cups butternut squash puree
  • 2 cups milk
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 Tbsp maple syrup
  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • powdered sugar

Instructions
 

  • In a bowl mix together the squash, milk, butter, eggs, vanilla, and maple syrup until incorporated.
  • In a separate bowl whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger. Add the wet ingredients into the dry and stir until just moistened.
  • Preheat your waffle iron according to manufacture's instructions. Cook the waffles until golden on both sides. Top with powdered sugar and serve.

Notes

If you prefer a sweeter waffle, add 2 Tbsp of maple syrup.
You can also use this batter to make delicious pancakes.
