April Produce Guide: Do You Know What's in Season?

April signals to many the start of springtime, even if it might be the snowiest month in other parts of the country (sorry, Colorado). With the flowers peeking through the ground also comes a new array of fresh produce and veggies that are waiting for you to capitalize on. Shopping seasonal produce saves you money in the long run and also benefits local farmers, especially those who farm sustainably. So to clear up any questions, here's our April Seasonal Produce Guide to help you get started.

1. Asparagus

If there was ever a time to eat fresh asparagus, it's springtime. Not that asparagus out of season isn't good, it's just not as good as it when it first rises.

Try shaving it over your salads or lining a puff pastry, gruyére-filled tart with it. Find the recipe for an Asparagus Gruyére Tart with Balsamic Glaze here

2. Beets

Dwight Shrute had it right: "First rule in roadside beet sales, put the most attractive beets on top. The ones that make you pull the car over and go, 'Wow, I need this beet right now.' Those are the money beets."

That being said, your local farmer's market will undoubtedly have some of the prettiest beets you've ever seen this spring. So what can you do with your beets? Try this Roasted Beets and Green Beans recipe on for size.

Radishes are at peak freshness during April, and they are an under-used vegetable in my opinion. They're delicious in a slaw for tacos and add a fresh crunch to salads raw. My favorite way to eat radishes is on the grill in a cast iron skillet with butter, because I love butter.

For a light lunch, consider this Carrot, Radish, and Cucumber Salad that you can make in big batches and portion out for lunches throughout the week.
