Scalloped potatoes, also known as potatoes gratin, originated in France in the 18th century. Translated roughly, gratin means the transitional verb "to form a skin". The technique, which is now widely used, takes ingredients and tops them with a browned crust which can be a combination of bread crumbs, cheese, eggs or butter.
