Roasted Rosemary and Thyme Cashews

INGREDIENTS

  • 1 lb raw cashews
  • 1-2 tbs olive oil
  • 2 tbs fresh rosemary leaves
  • 2 tsp fresh thyme leaves
  • 1/2 tsp cayenne
  • 2 tsp brown sugar
  • 2 tsp kosher salt
  • Pepper, to taste

Instructions

Preheat oven to 375 F.

Mix cashews and olive oil in a bowl. Toss to evenly coat.

Sprinkle in herbs and spices. Toss to evenly coat.

Bake on a rimmed baking sheet until very lightly browned, about 10 minutes.
